Meals in Minutes: Apple-stuffed Acorn Squash from Foot Steps to Health*

But, before the air turns to ice this winter, take time to enjoy the taste of Fall in Southeastern Minnesota with this easy microwavable recipe. This recipe is sure to warm your tummy with fresh apples, a touch of butter, brown sugar, cinnamon and pecans, all beautifully stuffed inside local acorn squash! I am sure this will quickly become a favorite in your house, just as it has in ours. And no worries, this is easy on your taste buds, as well as your waistline. Recipe serves 2 (a double recipe is shown in the picture)

1 cup chopped tart cooking apples
¼ cup  brown sugar, packed
1 Tbsp. butter, melted
¼ tsp. ground cinnamon
1 Tbsp. chopped pecans, if desired
1 medium acorn squash, halved and seeded

In a medium bowl, stir apples, brown sugar, butter and cinnamon to coat. Place squash cut-side up, in an 8 x 8-inch microwave safe baking dish. Fill each squash half with half of the apple mixture. Cover loosely with plastic wrap and microwave on high for  10 to 20 minutes, or until squash is soft. Sprinkle with pecans before serving.

Per serving: 300 calories, 9 g fat, 2 g protein, 59 g carbohydrate, 5 g fiber, 55 mg sodium
