I have to admit, I found this delicious cake recipe on Pinterest. It was a pin from Janae’ Cook on her board Yummyness. The idea that this wonderful looking cake only took 2 ingredients intrigued me, so I decided to stop by the store this evening to pick up the ingredients to give it a try. Oh my goodness, the house smells so wonderful and the finished cake tastes fantastic! I have always loved angel food cake, but honestly never baked one at home. I can see that I will be baking this one often. Angel food cake is a low-fat cake, and the added pineapple adds some fruit – and most of us need more fruits and vegetables in our diets – correct? So here it goes…

1 box angel food cake mix
1 can (20 oz) crushed pineapple in juice

Preheat oven to 350º F. In a large bowl, combine the above ingredients and stir well. You will notice  the mixture becomes airy and slightly bubbly. Pour the mixture into a 9 x 13-inch cake pan. I used a glass one and have not tried a metal one. Do not oil the pan. Bake for 30 minutes. It should be golden brown and cracked on top. Cool and enjoy, although we ate our first piece warm and it was really good. The second piece at a slightly cooler temperature was also really good…smiles!

Each piece provides approximately: 150 calories, 0 g fat, 3 g protein, 35 g carbs, 0 g fiber, 320 mg sodium

    I made this cake, but left out the bowl.
    I dumped the mix into the 9×13 pan, dumped the pineapple into that, then folded until it was incorporated. 30 minutes Into a 350°F oven for 30 minutes and it was done. Easiest cake I’ve ever baked.
    Slathered it with CoolWhip Lite and sprinkled some coloured shredded coconut on top.
    Brought it to a pot-luck, and received many compliments.
